Sweet Jaggery Hoppers (hakuru AAppa) recipe for your breakfast or evening teatime.
Following recipe is for 30 – 40 hoppers.
INGREDIENTS:
- Rice Flour 1.5 lb
- ½ teaspoon of Soda bicarbonate (Yeast)
- Thinly Chopped Jaggery 1 ¾
- Little bit of Salt
- ½ a tea cup of Hot water
- Coconut Milk (Around one coconut)
- Coconut water (Around 2 coconuts) or 2 OZ water mixed with one teaspoon of yeast
- 4 Eggs
METHOD:
- Put rice flour into a bowl and add coconut water or yeast mixed with water. Pour hot water into it and close the bowl. keep it for the whole night beside.
- Add coconut milk, crushed jaggery and eggs in the following morning and mix it.
- Add remaining cardamom powder, salt and soda and mix it. This mixture should be a bit thick.
- Leave the mixture to blooming for a while .
- Heat and cook the pan as you would a normal hopper
